Bar Food – Chicken Fingers and Fries

1 pound boneless skinless chicken
Whole Wheat Bread Crumbs
3 Egg Whites
Black Pepper
Garlic Powder
Adobo Spice
Onion Powder
Sea Salt
Yam

Add spices to bread crumbs and mix thoroughly. Trim fat from chicken. Cut chicken in half inch strips. Dip each strip in egg whites then roll in bread crumb mixture and arrange on baking sheet sprayed with Pam non-stick spray. Bake 25 minutes at 375 degrees or until no longer pink in center.

In the meantime, wash and slice yam or potato into 1/8 inch slices. Arrange on Pam-sprayed baking sheet. Spray slices with “I Can’t Believe It’s Not Butter” spray. Sprinkle with sea salt and garlic powder. Bake until crispy around the edges.

Frank’s Red Hot
Low Fat Bleu Cheese Dressing
Low Fat Mustard Dressing
Low Sugar BBQ Sauce

Now grab a lite beer if you must, turn on Sportcenter, and use your imagination! It won’t be hard!

    I’d like to see more of this type of recipe. It’s easy to make “healthy” foods.. it’s hard to make them taste like you’re eating a cheat food. This recipe rocks!

      Here’s the breakdown:

      Makes four servings of:
      4 oz of Chicken
      1 med Yam

      Cal: 380
      Fat: 3.6 grams
      Carbs: 43 grams
      Prot: 36 grams

      Then just factor in any calories or carbs if you use a condiment like ketchup or BBQ sauce, etc. If you omit the yam, you’re down to only 5.5 grams of carbs and you can make it a low carb evening meal. 🙂
